Simple, Satisfying, and Oh-So-Sweet

Delectable offerings take center stage at holiday gatherings.  From tasty hors d’oeuvres, to flavorsome finger foods, to mouth-watering casseroles, delicious edibles abound.

However, time is often limited during this festive season, so spending endless hours in the kitchen is usually not on most people’s wish list.

Want a couple of tried-and-true, no-bake cookie recipes that take only minutes to prepare?  Here are two.

 

Chow mein noodle cookies.  Different variations of this cookie have been circulating for a while.  Actually, they’re so good, some people pass over the expensive bakery items and head straight for these!  What will you need?

One 12-ounce bag of semi sweet chocolate chips, one 12-ounce bag of butterscotch chips, one large can of chow mein noodles, and twelve ounces of cocktail peanuts.

Mix the chocolate and butterscotch chips together and heat in a double boiler or microwave until completely melted.  Note: If you go the microwave route, proceed slowly; you do not want to burn the chips.  Next, blend the melted chips, chow mein noodles, and cocktail nuts together in a large bowl.  Line two cookie sheets with wax or parchment paper and incrementally spoon mixture onto pans (each pan should have about 15 to 20 spider-looking cookies, depending on the size of the scoops).  Carefully place the cookies in the refrigerator so they can harden (it will take at least a half hour or so).  Once the cookies are firm, they can be eaten or put in zip lock bags to be refrigerated or frozen (they freeze nicely and take little time to thaw!).

A different spin on chow mein noodle cookies?  Use peanut chips instead of butterscotch chips for a peanut buttery flavor: or, omit the cocktail peanuts and substitute with a cup of flaked coconut.

 

Peanut butter ball cookies.  This no-cook favorite is so easy!  The ingredients?

You will need 1 ¼ cup of crushed graham crackers, 2 tablespoons of sugar, ½ cup of peanut butter, 1/3 cup corn syrup or honey, and ¾ cup of powdered sugar.

Mix the graham crackers and sugar together.   Add the corn syrup and peanut butter and blend ingredients well.  Take a spoonful of the mixture and shape into a ball with your hands.   Roll the ball in the powdered sugar.  Place on a large cookie sheet lined with wax paper.  Repeat until all the mixture is gone (you should have about two dozen cookies).  Put in the refrigerator for an hour or so to hardened.

And variations?  Forget the powdered sugar completely and roll the cookies in mini, semisweet chocolate chips.  Another suggestion?   Dip the cookie balls in a warm chocolate sauce.

A quick recipe for chocolate sauce?  Mix one pound of confectionery sugar (a.k.a., powdered sugar), 2 teaspoons of unsweetened cocoa, and hot water; add the water in very small amounts until you reach the desired consistency.  Note: You can also include 1 teaspoon of cinnamon and/or 1 teaspoon of cloves if you desire a spicy chocolate flavor.
